Combine the rosé, gin, lemon juice, passion fruit puree, honey mix, and a dash of bitters (optional) in to a cocktail shaker. Shake with 1 cup of crushed ice. Pour into a glass and top off with soda water. Add additional ice if needed and enjoy!

Notes: To make the honey mix, simmer ½ cup water with ½ cup honey in a small saucepan over moderate heat, stirring until the honey has dissolved. Let the syrup cool. The honey mix can be refrigerated for up to 1 month.
